Alpha Amylase

Alpha Amylase is an endo-acting enzyme that hydrolyses α-bonds of large, α-linked polysaccharides such as starch and glycogen, yielding shorter chains like dextrins, glucose, and maltose. It is the main form of amylase found in humans, other mammals, starch-rich seeds, and microorganisms. Industrially, it is produced through microbial fermentation using both submerged and solid-state methods. Alpha amylase finds wide application in the food and beverage industry, as well as in the production of paper, textiles, and detergents.

Applications

  • Sugar Production: In sugar production, starch from sources like corn or wheat is hard to convert into sugars directly. Our alpha amylase breaks it down into glucose and maltose under mild conditions, helping produce HFCS or crystalline sugar efficiently and with lower energy use.
  • Brewing: During beer brewing, barley starch is difficult for yeast to ferment. Our alpha amylase converts it into fermentable sugars during mashing, supporting consistent alcohol production and desired flavor.
  • Baking: Bread dough often lacks enough natural sugars for good yeast fermentation. Our alpha amylase produces these sugars from starch, improving dough rise, softness, and shelf life.
  • Beverage Alcohol: In spirits production, malting is usually required to make starch fermentable. Our alpha amylase replaces this step by converting grain starch directly into fermentable sugars, boosting ethanol yield for products like whiskey and vodka.
  • Biofuel: For bioethanol, starch in feedstocks like corn resists fermentation. Our alpha amylase breaks it into sugars before yeast is added, increasing ethanol output and overall efficiency.
  • Textile Desizing: Starch-based sizing on fabrics blocks dye absorption. Our alpha amylase removes it by breaking it into soluble compounds, making fabric ready for dyeing without harsh chemicals.
  • Paper Industry: High-viscosity starch affects paper coating quality. Our alpha amylase adjusts the viscosity for smoother coating, enhancing paper strength, smoothness, and print quality.
  • Detergent Manufacturing: Starch stains from foods are tough to remove. Our alpha amylase breaks them down into water-soluble sugars, improving cleaning performance in laundry detergents.
  • Animal Feed Processing: Starch in feed is hard for animals to digest. Our alpha amylase pre-digests it into simple sugars, improving nutrient absorption and animal growth rates.
  • Pharmaceutical Industry: Starch is often used as a binder or filler in tablets. Our alpha amylase helps modify or remove excess starch during formulation, aiding in controlled drug release and improved tablet disintegration.

Usage Guidelines

  • Dosage: 0.1-0.5% (w/w) of starch substrate, depending on application.
  • Process: Add during liquefaction stage; maintain pH 5.5-7.5 for optimal activity.

Storage Conditions

  • Liquid: Store at 4-25°C; avoid freezing. Stable for 6 months.
  • Powder: Store in a dry place below 30°C. Stable for 12 months.
