Beta amylase is an exo-acting enzyme that hydrolyzes starch by cleaving α-1,4-glycosidic bonds from the non-reducing ends of polysaccharide chains, releasing maltose units sequentially. Unlike alpha amylase, it does not act within the chain but works progressively from the ends.
